Meat, Eggs and Potatoes

Ingredients

Makes 4

  • 1  pound(s)  Ground Beef, Turkey or Italian Sausage
  • Potatoes (2 small cans of new potatoes)
  • 6  Eggs

Preparation

Brown the meat in a large skillet. Season with salt & pepper. While browning, cut up the potatoes and beat the eggs in a bowl. Season the eggs a bit while beating them. Add the potatoes to the meat and let them brown. Then add the egg mixture. When the egg mixture is thoroughly cooked, you are ready to serve. Serve with ketchup or salsa.

You could also add onion and garlic to the meat while cooking and/or sharp cheddar to the eggs if desired.
