Mac Salad


  • 1  c  elbow macaroni
  • 1  c  fresh green beans, cut into 1-1/2 inch pieces
  • 1  bag Romaine lettuce, torn
  • 2  cans white tuna in water, drained and flaked
  • 1  c  chopped tomatoes
  • 1/3  c  halved pitted ripe olives
  • 1/2  c  Italian salad dressing
  • 1/2  c  sour cream
  • 1  tsp  grated lemon peel


Cook macaroni as directed on package, adding green beans to the cooking water during the last 2 minutes of the macaroni cooking time. Drain macaroni mixture. Place in large mixing bowl. Add lettuce, tuna, tomatoes, and olives; mix lightly. Mix dressing, sour cream and lemon peel. Pour over macaroni mixture; toss to coat. Serve immediately or stick in the cooler for later!
