I Scream Muffins


Makes 12

  • 1 3/4  c  all-purpose flour
  • 1/4  c  packed brown sugar
  • 2 1/2  tsp  baking powder
  • 1/4  tsp  salt
  • 1/4  tsp  ground nutmeg
  • 1  egg, beaten
  • 1  c  chocolate chip ice cream, softened
  • 1/3  c  cooking oil


In a medium mixing bowl stir together flour, brown sugar, baking powder, salt and nutmeg.

In a small bowl mix the egg, ice cream and oil. Stir into dry ingedients until just moistened.

Fill greased or paper-lined muffin pans 2/3 full. Bake in a 375 degree oven for 18 - 20 minutes or until done.
