Howards Hash
Ingredients
- 1 package smoked sausage (may use ham as well)
- 3 medium potatoes
- 1/2 medium purple onion
- 5 green onions
- 1 can whole kernel corn
- 2 stalks celery, if desired
- 1/2 stick real butter
- celery salt, lemon pepper
- salt & pepper
Preparation
Start by dicing the potatoes & sausage and put into buttered skillet - cook over medium heat until the potatoes start to soften. About 10 minutes. Stir often. Add celery salt, lemon pepper, salt & pepper to taste. Add diced purple onion & green onions. Stir often. Add the celery & drained corn. Cook covered another 10 minutes or until the purple onions start to wilt. Serve with corn bread or sourdough bread.
