Makes 4

  • 2  c  leftover meat (ham, roast, chicken, turkey) chopped
  • 2  c  shredded potatoes
  • 2  c  shredded carrots
  • 2  c  chopped onion
  • 8  eggs
  • 1/4  c  oil
  • salt and pepper


Heat about 1/4 cup oil in skillet and fry potatoes until browned, add carrots and cover 10 minutes. Flip over and add onion and meat. Cook until the other side is golden brown. Make a well in several areas with the back of a spoon. Drop eggs into the wells and cover. Season with salt and pepper if desired. Cook until eggs are the desired doneness. Serve with ketchp, salsa, gravy or grated cheese.
