Garlic Basil Chicken
- 1 Tbsp mayonnaise
- 1/2 clove garlic, finely minced
- 1/2 tsp dried basil
- 1/2 carrot cut into strips
- 2 thin slices sweet onion, cut into half
- chicken breasts
Mix the mayonnaise, garlic and basil. Set aside. Lay a 12 in. square of foil on a flat surface. Pile the onion and carrot strips in the center. Place a chicken breast half on the vegetables. Spread the mayonnaise mixture over the chicken breast. Fold foil leaving no air holes. Bake until chicken is no longer pink, 20-30 minutes depending on your heat source.
