Ellie's Eggs


  • 1  stick butter or margarine, melted
  • 1  dozen eggs, beaten
  • 1  can diced Rotel tomatoes with green chilies (pour off half of juice)
  • 1  pound(s)  Velveeta cheese
  • 1  pound(s)  cubed ham
  • 1  8 oz. container sour cream


Beat all ingredients together with electric mixer. Pour into 9 x 13 ungreased pan. Bake at 325 degrees for one hour. Allow to sit for 15 minutes and cut into squares. May be mixed up the night before and stored in a covered bowl in refrigerator. Stir well and pour into pan and bake in the morning. Serve with fresh fruit and muffins or croissants.
