Easy Peanut Satay Delight
- 1 can coconut milk
- 2 Tbsp peanut butter
- sweet chilli sauce (Thai style)
- vegetables (or Tofu)
- chicken (if desired)
Place two heaping tablespoons of peanut butter in saucepan, slowly heat until it begins to melt. Add small mounts of coconut milk while stirring, continue to stir so it doesn't 'catch' on the bottom of the pan. Add some sweet chilli sauce to your taste (we use approximately a tablespoon). Meanwhile, in a wok or pan, cook chopped vegetables, chicken or tofu until done. Cook some rice. On each plate make a bed of rice, lay chicken on, then vegetables or tofu lay on top and ladle the satay sauce over the top. For an easier meal you could use boil in a bag rice and a precooked chicken!
