Easy Meatball Stew


  • 1  carrot, chopped
  • 1  stalk celery, chopped
  • 1/2  c  onion, chopped
  • 8  oz. macaroni pasta
  • 64  oz. chicken stock
  • 1/2  pound(s)  ground beef
  • 1/4  c  bread crumbs
  • 1  egg
  • salt and pepper


Saute carrot, onion, and celery in olive oil until tender. Add chicken stock and bring to a boil. Form meat, egg, and bread crumbs into small meatballs and drop into boiling stock. Simmer 10 minutes until cooked through. Add pasta to pot and boil until tender (about 10 more minutes). Season to taste.
