Cucumber Salad


  • 3-4  large cucumbers, thinly sliced
  • 4  large onions, thinly sliced
  • 2  large green or red peppers, thinly sliced (optional)
  • 1/4-1/3  c  salt
  • 2  c  white vinegar
  • 3  c  sugar
  • 1  Tbsp  celery seed


Mix together the salt, vinegar, sugar and celery seed until the sugar is dissolved. Pour over vegetables; leave in bowl overnight. Put in jars and store in the refrigerator. Wait 3 or 4 days before eating. This will keep a LONG time.
