Cowboy's Breakfast


  • 8  slices bacon, cut into pieces
  • 1/2  medium onion, chopped
  • 2  potatoes, chopped
  • 4  eggs
  • 1/4  c  milk


Fry bacon in skillet over medium coals until crisp. Drain partially, reserving drippings. Add onion to bacon in skillet. Saute until onion is tender. Add potatoes; mix well. Cool, covered, until potatoes are tender, stirring frequently; add a small amount of reserved bacon drippings if necessary. Beat eggs and milk in mixer bowl until foamy. Pour over potatoes. Cool until eggs are set. May serve with salsa or ketchup.
