Carrot and Egg Salad
A great camping salad from the experts at KOA.
- 1/2 head of iceberg lettuce chopped
- 2 carrots, shredded
- 3 hard boiled eggs, chopped
Toss lettuce, carrots and eggs together in large bowl. Then mix up the following dressing in a separate bowl:
- 1-1/2 teaspoon grated onion
- 1/2 cup miracle whip or mayonnaise
- 1/3 cup Catalina dressing
Pour dressing over salad mixture and toss. Serve immediately.
