- 1 zucchini per person, approximately
- 2 eggs, beaten (egg beaters can be used)
- 1/2 c seasoned bread crumbs
- 3 Tbsp olive oil
- salt and pepper to taste
Cut zucchini diagonally into small slices. Dip slices into beaten egg then dip slices into seasoned bread crumbs until completely covered. Season with salt and pepper. Place zucchini slices on heavy duty aluminum foil. Drizzle slices with olive oil. Grill approximately 2-3 minutes each side.
