Calico Caramel Corn


Makes 8

  • 8  c  fruit-flavored round toasted oat cereal
  • 1/2  c  packed brown sugar
  • 6  Tbsp  margarine or butter
  • 3  Tbsp  light corn syrup
  • 1/4  tsp  salt
  • 1/2  tsp  vanilla
  • 1/4  tsp  baking soda


Place cereal in a 15x10x1-inch baking pan. Set aside.

In a 1 1/2-quart saucepan combine brown sugar, margarine, corn syrup and salt. Cook and stir over medium heat until margarine is melted and mixture comes to boiling. Cook, without stirring, for 5 minutes more. Remove from heat.

Stir vanilla and baking soda into mixture in saucepan. Pour over cereal; stir to coat evenly. Bake in 300 degree oven for 15 minutes. Stir. Bake 5 - 10 minutes more. Transfer cereal to a large bowl. Cool. Store in a tightly covered container.
