Bob's Simple Skillet Supper

This is one of my husband's classic meals to make at the end of a travel day. He plugs in our nonstick electric skillet outside, then we just relax while it cooks.

Ingredients

  • 1/2  pound(s)  link sausage
  • 1  green pepper, seeded and sliced into strips
  • 1  large onion, sliced
  • 3 - 4  red potatoes, cut into chunks
  • salt and pepper

Preparation

Preheat skillet while slicing the onion and pepper. Slice sausages in half lengthwise so they will lie flat in the pan and cook more quickly and evenly. Spray pan lightly with cooking spray. Place sausage in hot pan and brown on all sides. Add onion and pepper -cook until they begin to soften. Place potatoes on top of vegetables. Season as desired with salt and pepper. Cover, reduce heat and simmer until potatoes are soft and no pink is left in sausage. stirring occasionally. If you want a crisp crust on the potatoes, remove lid and raise heat during the last 10 minutes of cooking.
