Camper Crunch Cookies

Camper Crunch Cookies Recipe 


Wet                                Dry

1 lb butter                      5 cups flour

1 1/2 cup sugar             2 tsp baking powder

2 eggs                           Pinch of salt 

2 tsp vanilla                  Icing 

                                      2 cups confectioners sugar 

                                      3 TB milk

                                      Food coloring gel, optional 


Preheat oven to 350 degrees. Combine dry ingredients in medium bowl and set aside. In large bowl cream softened butter. Add eggs, one at a time followed by vanilla.

Mix in dry ingredients. Cover and cool in refrigerator for 30 minutes.

Roll out dough on lightly floured surface to about 1/8 inch thickness. Cut into shapes. Make sure to lightly flour the rolling pin and cookie cutters so the dough doesn't stick. Bake for 8-10 minutes. Cool cookies. 

To make icing: Mix 2 cups of confectioners sugar and milk. Add milk as needed for desired consistency. Let your creative juices flow and decorate as you please! If you'd like, separate icing in small bowls and add different food color gels for a array of colors.   

Don't have any cookie cutters on-hand but really want to try this delish recipe? No problem! Just use a drinking glass as your shape! Feel free to experiment with different flavor extracts like almond and lemon or add mini chocolate chips to the batter. The possibilities are endless. Just save us a bite!
