No-Fuss Meals for Life on the Road

Cooking in your RV doesn’t have to mean sacrificing good food. With limited space and tools, it helps to have simple, hearty recipes that come together quickly and clean up just as easily. Whether you're road-tripping, full-timing, or just out for a weekend getaway, these no-fuss meals will keep you well-fed without the mess. 

One-Pan Breakfast Scramble

Ingredients:

  • 2 eggs
  • 1/4 cup diced bell peppers/onions
  • 1/4 cup pre-cooked sausage or bacon
  • Shredded cheese (optional)

Instructions:

  1. Heat a little oil in a skillet over medium heat.
  2. Sauté the veggies and meat until warm.
  3. Crack in the eggs and scramble everything together.
  4. Sprinkle cheese on top and serve.

Clean-Up: Just one pan to wash!


Grilled Cheese & Soup Combo

Ingredients:

  • 2 slices of bread
  • 2 slices of cheese
  • Butter
  • 1 can tomato soup

Instructions:

  1. Butter the bread and grill with cheese in a skillet until golden.
  2. While the sandwich cooks, heat soup in a small pot or even the can (be careful!).
  3. Serve hot for a cozy, comforting meal

Camper Tip: Add sliced tomato or ham for extra flavor.


Campfire Quesadillas

Ingredients:

  • 2 flour tortillas
  • 1/2 cup shredded cheese
  • 1/2 cup cooked chicken or canned beans
  • Salsa or hot sauce (optional)

Instructions:

  1. Heat a skillet or camp stove on medium.
  2. Place one tortilla in the pan, layer on cheese and chicken/beans.
  3. Top with second tortilla and cook 2–3 minutes per side until golden and melty.
  4. Slice into wedges and serve with salsa.

Camper Tip: Wrap in foil and cook over a fire grate if you’re outdoors.
