– ½ cup (1 stick) salted butter, cut into pieces
– 1 10-ounce package mini marshmallows (about 6 cups)
– 1/2 tsp kosher salt (use ¼ tsp if using table salt)
– 1 tsp ground cinnamon
– ¼ tsp ground cayenne powder
– ½ tsp vanilla
– 6 cups rice crispy cereal
– ½ cup white chocolate or cinnamon chips, optional
– 2 tbsp. cinnamon sugar, for sprinkling
1. Butter a 9×9-inch pan or spray with cooking spray.
2. Melt butter in a light-colored saucepan over medium heat. Continue cooking until the butter comes to a boil and begins to turn golden brown and smell nutty, about 5-8 minutes.
3. Immediately remove from the heat and stir in marshmallows. Continue to stir until marshmallows melt.
4. Stir in salt, cinnamon, cayenne and vanilla.
5. Place cereal in a large bowl and pour in marshmallow mixture, using a spatula to scrape the cooking pan.
6. Stir until combined, then stir in white chocolate chips.
7. Add cereal mixture to prepared pan and gently press to fill pan to the edges.
8. Sprinkle the top evenly with cinnamon sugar.
9. Place under broiler for 2-3 minutes until caramelized and lightly browned – keep a close watch so it doesn’t burn. Alternately, use a kitchen torch to caramelize the sugar.
10. Remove from pan and cut into squares.
11. Wrap any leftovers in plastic wrap and store at room temperature.
