Our family finds it easy to do as much in the week prior to going camping as possible to make mealtime easy for Mom and everyone.
We love ribs, and I like to cook ours in a pressure cooker ahead of time. I buy ribs at a discount club and find that cutting each section into 4 pieces of around 4 ribs each makes portioning easy. I then put on a dry rub and let it sit overnight in the fridge. I then put it into my Easy Pot pressure cooker and add a little apple cider vinegar and apple juice for my steaming liquid. I then cook each batch for 19 minutes. After they are fully cooked, I can refrigerate them for several days if needed. When we are ready, we heat them on the grill with our family's favorite barbecue sauce, Sweet Baby Ray's. Having these done beforehand saves time and valuable counter space while making meals in our RV.

Taco meat (which can be used for tacos or combined with all the fixings for a lovely taco salad.)
Pulled pork for sliders
For breakfast, pre-mix your dry ingredients for pancakes and then just add the liquids when you are ready to make them. The same thing can be done for cobbler topping.
