• 3  Tbsp  cooking oil
  • 1  pkg frozen hash brown potatoes
  • 3 -4  hot dogs or equivalent amount of meat cut into bite size pieces
  • 1/2  medium onion, chopped
  • 1/2  bell pepper, chopped
  • garlic powder
  • salt and pepper
  • 3  eggs
  • 8  dashes Frank's Louisiana hot sauce
  • 3/4  c  grated cheese


In a large skillet, heat oil. Add hash brown potatoes and cook until they begin to brown. Salt and pepper to taste. Add hotdogs, onions, and peppers. Meanwhile, break eggs into small bowl, add hot sauce, and whisk until well blended. Pour into potato mixture and lightly stir to evenly mix. Cook covered for about 3 - 4 minutes making sure eggs are completely cooked. Remove from heat, add cheese to top and return cover to lightly melt cheese before serving.
