Lemon Potato Chicken


Makes 4

  • 4  boneless, skinless chicken breasts
  • salt and pepper
  • 1  Tbsp  oil
  • 1  10 3/4 oz. can Cream of Potato soup
  • 1/4  c  milk
  • juice of one lemon


Pound Chicken Breasts until even in thickness, season breasts with salt and pepper. Heat oil in skillet; brown breasts on both sides. Combine soup, milk and lemon juice, add to chicken and heat to a boil. Cover, reduce heat and cook until chicken is done.
