- 5 medium potatoes (wash, but do not peel)
- 1 large onion (chopped)
- 4 slice(s) bacon
- salt and pepper
- garlic. if desired (chopped)
- 2 Tbsp butter or margarine or 1 Tbsp olive oil
You will need a large sheet of heavy duty aluminum foil, or double the normal foil. Put the bacon slices side-by-side in the center of the aluminum foil. Cut the potatoes into cubes (1/2 to 3/4 inch square) and put on top of the bacon. Top potatoes with onion and seasonings. Dab with cut up butter, or drizzle olive oil over the top. Fold aluminum foil and seal all edges. Place on pre-heated gas or charcoal grill for 30-40 minutes. Cut foil open across the top (watch out for hot steam). Serves 2-4. A great companion to steak, burgers, pork chops, chicken, you name it!
