Chicken Cacciatore


  • 1  frying chicken
  • 1  bell pepper
  • 1  white onion
  • 8  oz  sliced mushrooms
  • 3  cloves of garlic
  • 1/4  c  olive oil
  • 1  large jar of spaghetti sauce
  • 1  Tbsp  dry oregano
  • 1/4  c  fresh basil
  • 1/2  c  red wine
  • salt and pepper


Cut up chicken into pieces, chop bell pepper, onion, garlic, and fresh basil. Heat olive oil in Dutch Oven or over coals until hot. Brown onions and garlic, add chicken pieces (turning to brown on both sides) and red wine. Stir in bell pepper, mushrooms, spaghetti sauce and salt & pepper and herbs. Cover with lid and add coals to the top. Cook 30 to 45 minutes. Serve with/over white rice or pasta. I like to prep all my ingredients into plastic bags at home. You can also add zucchini, eggplant, fresh tomatoes, squash, Italian sausage or anything you like.
