Vidalia Onion Tart
This can be served warm or cold as a side dish.
- 1 medium size Vidalia onion or other sweet onion, thinly sliced
- 3 eggs, beaten
- 1 Tbsp flour, dissolved in 1 Tbsp water
- 6 oz. heavy cream
- 1/4 c grated Parmesian cheese
- 1 Pillsbury pre-made pie crust
- 1 Tbsp butter
- 1 Tbsp olive oil
Thinly slice the onions and saute in a little olive oil and butter until soft but not browned. remove from heat and cool slightly. Pre-heat RV oven or camping oven to 350 degrees. Rollout pie crust and place in 8 inch pie dish or tart pan with removable bottom. Bake at 350 degrees for about 10 minutes until crust starts to brown. Combine the onions, heavy cream, eggs and cheese and pour into pie shell. Bake in 350 degree oven for 20-25 minutes until tart is slighlty raised and a knife comes out clean when tart is pierced in the center. Remove from oven and cool slightly on wire rack.
