Southern Pea Salad

This is courtesy of my Sister-In-Law Lori Coffey.


  • 1 can pinto beans
  • 1 can black-eyed peas
  • 1 can shoe peg corn
  • green pepper
  • onion
  • 1/2 c sugar
  • 1/2 c olive oil
  • 1/3 c vinegar
  • salt and pepper


Drain and rinse the peas and corn. Combine all ingrediants and stir. Refridgerate overnight and enjoy!
