Potato-Egg Scramble

Ingredients

Makes 4

  • 4  boiled medium potatoes
  • 6  slice(s)  bacon
  • 1  bunch(es)  green onions, chopped
  • 4  eggs
  • salt and pepper

Preparation

Cut up the boiled potatoes into 1/2 inch cubes. Cut the bacon into bite sized pieces and fry until crisp. Pour off 1/2 the fat. Add the potatoes and onions. Fry until slightly browned. Add the 4 eggs. Season with the salt and pepper. Stir until the eggs are set.
