One Pan Breakfast Goulash
- 1 pound(s) bacon, cut in 1" pieces
- 1 medium onion, diced
- 4 medium potatoes, diced
- 1 medium green pepper, diced
- 1 can mushrooms (optional)
- 1 medium tomato, diced
- 8 large eggs
- 2 cheese slices, in pieces or 1/4 cup shredded cheese
- seasoning to taste
In a skillet or other flat cooking surface, brown the bacon, onions and potatoes together on a low heat. Drain all grease. Add green pepper, tomatoes and mushrooms and toss several times until heated. Crack, open and pour each egg directly on the goulash mixture, in a different place each time, breaking each yolk as you go. Toss and turn gently, until eggs are cooked. Turn off heat source and place cheese evenly on top of mixture.. Season to taste.
Ingredient Variations: Replace bacon with any bite-size meat like ground or link sausage. Use leftovers or any combination of food to taste as long as all grease is skimmed or soaked up with a paper towel before the eggs are added toward the end of cooking process to "hold it all together".
