No Bake Date Nut Chewies

Ingredients

  • 1 1/2 stick melted butter
  • 1 c sugar
  • 1 8 oz. package of dates, chopped
  • 1 tsp vanilla
  • 1 c chopped nuts, any kind
  • flaked coconut (optional)

Preparation

Dissolve sugar in butter and mix in dates. Cook over medium heat for 2 minutes. Stir in the vanilla and chopped nuts. When cooled - roll into round balls (about the size of a half-dollar) and roll in flaked coconut (optional).
