Hamburger Hobo Pie

Ingredients

  • 1 1/2 pound(s) ground chuck or ground beef
  • 1 medium onion, thickly sliced
  • 6 - 8 medium sized carrots, cut into chunks
  • 6 red potatoes, cut into wedges
  • seasoning salt

Preparation

Spray a large piece of heavy duty foil (or the Reynolds foil bags) with no stick spray. On the foil, scatter vegetables, and break up ground meat and loosely mix together (do not pack or smash together). Sprinkle liberally with seasoning salt (or other spices you prefer to use). Fold the foil into a pouch, making sure all ends are tightly crimped together. Place foil packet onto grill grate if you are grilling, or onto a grate over a campfire. Do not put foil packet directly onto coals as the foil will burn through. Now for the tricky part: turning it over and knowing when the food is done. I use heavy duty grilling tongs and an old oven mitt to turn - watch for the grease leaking out of the foil packet so that it doesn't cause a flame flare-up. When the potatoes are soft, then everything else is cooked. I usually push on the packet and if I feel a potato smash, then I know everything is done. Or you can open the side of the packet and test a potato with a knife. Cooking time is approximately 30 minutes, depending on the how hot your fire or grill is. My family prefers the vegetables to be on the burnt side, and we all fight over the veggies that burn onto the foil! Just take the packet off the fire, put onto heat proof surface, and cut an X into the top of the packet and open up. Watch the steam! And enjoy!!!!

Alternative veggies: fresh green beans, bell pepper slices, fresh corn cut off the cob, a clove or two of garlic, thick chunks of squash.
