Grandma's Favorite Camper Breakfast

Can use turkey bacon for a lower-calorie alternative

Ingredients

Makes 6

  • 6 slices ham, Canadian bacon or regular bacon (cooked)
  • 6 oz. swiss cheese, shredded
  • 6 large eggs
  • 1/2 c whipping cream (or half and half)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 c grated Parmesan cheese
  • 1/2 tsp paprika
  • 6 English muffins

Preparation

Preheat oven to 425 degrees. Lightly grease a 8 x 8 inch baking pan. Place ham/bacon in a single layer in the pan. Sprinkle with Swiss cheese. Break eggs over cheese, spacing evenly. Pour whipping cream over eggs; sprinkle with salt and pepper. Bake in oven for 10 minutes. Sprinkle with Parmesan and paprika. Bake 8 to 10 more minutes or until set. Let stand 10 minutes before serving. Divide into 6 portions, and put each portion on an English muffin.
