Foolproof Roast Chicken

Ingredients

  • 4  chicken quarters or chicken pieces of your choice (skin on)
  • 2  tsp  salt
  • 1/2  tsp  pepper
  • bay leaves
  • 1/3  olive oil
  • 2  tsp  minced garlic
  • 1  Tbsp  minced onion
  • 1  tsp  salt
  • 1/4  tsp  pepper
  • 1/2  tsp  powdered garlic
  • 1/2  tsp  Italian herbs
  • 1/2  tsp  parsley flakes (or 1 tsp fresh parsley, finely chopped)
  • 1/4  tsp  sage
  • 1/4  tsp  turmeric
  • dash  paprika

Preparation

Boil your chicken pieces in a pot of water with salt, pepper, and a few bay leaves for 25-30 minutes - until meat is cooked through but not falling off the bone. Drain and let dry for a few minutes. The rest of the ingredients are for the sause. Mix together the sauce ingredients while chicken is cooking. "Paint" the sauce onto the cooked chicken with a pastry brush. Roast the chicken over a campfire or charcoal until the outside is golden brown or as done as you like. If you're stuck indoors, you can also broil or bake at 400+ degrees until desired doneness. Skin should be crispy when done.
