Foil Dinner for One

Ingredients

  • 1  potato
  • 1/4  onion
  • 1/4  bell pepper
  • 1/2  c  baby carrots
  • 1/4  c  sliced celery
  • canola oil spray
  • 2  thin hamburger patties
  • seasoning salt
  • pepper or Mrs. Dash
  • 1  Tbsp  butter

Preparation

Wash and scrub the potato, then slice. Slice the onion, pepper, and celery. Spread heavy duty aluminum foil out. Spray the foil with oil. Place one hamburger patty on foil. Lightly season with salt and pepper or Mrs. Dash. Layer vegetables over patty and lightly season. Lastly, place seasoned patty of hamburger on top. Add butter. Lay second sheet of aluminum foil over food. Carefully seal all edges of foil. Foil pockets can be substituted for sheets of foil. Non-stick foil may also be used. Cook over coals for 30 min., turning If using tongs, be careful to not puncture foil. Each person can individualize their meal with vegetables of choice. When your meal is cooked you can eat it right out of the foil. Length of cooking may be adjusted for larger or smaller quanities of food. If one patty is preferred, then you can divide meat in half and place it on top and bottom.
