Easy Poached Salmon
Lay a filet of salmon (2 lbs or so) on a sheet of heavy-duty foil. Drizzle olive oil over the length of the filet; then lightly season with garlic salt and lemon pepper. Tightly wrap the filet in the foil to seal it and place over a hot (400-deg) grille for about 10 - 12 minutes.
Unwrap and enjoy with a salad or side of your choice. Don't forget a glass of chilled white wine (a fume' blanc is a good choice). Total time from start to finish - about 15 minutes (3 or 4 minutes of prep time; the rest cooking).
