Easy Grilled Lemon Chicken


  • 1/2 c lemon juice
  • 1/4 c and 2 tbsp olive oil
  • 1 1/2 Tbsp Dijon mustard
  • 3 large cloves garlic, finely chopped
  • 3 Tbsp red bell pepper, finely chopped
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 6 skinless, boneless chicken breast halves


In a zip loc bag, mix the lemon juice, olive oil, Dijon mustard, garlic, red bell pepper, salt, and pepper. Set aside 1/4 cup of the mixture to use for basting. Place chicken in the bag, and marinate at least 20 minutes or longer in the refrigerator or cooler. When coals are hot and ready,drain and discard marinade from the bag. Lightly coat the grill grate with cooking oil or non-stick vegetable spray. Place chicken on the grill. Cook about 6 to 8 minutes on each side, until juices run clear, basting occasionally with the reserved marinade.
