Apple Dumpling Cake
- 2 cans apple pie filling with no sugar added
- 3 Tbsp maple or regular pancake syrup
- 1 c sweetened coconut flakes
- 3 tsp cinnamon
- 4 Tbsp dark brown sugar
- 2 c chopped walnuts or pecans
- 2 boxes yellow cake mix
- 1 stick butter, cold
- 1/2 c butterscotch chips, optional
In a bowl mix apples, 2 tablespoons syrup, 1 cup coconut, 2 teaspoon cinnamon, 2 tablespoon dark brown sugar, 1 1/2 cups chopped nuts, (optional 1/2 C. butterscotch chip). In a separate bowl mix dry cake mix, 1 teaspoon cinnamon, 2 tablespoon dark brown sugar, cut in cold butter till mix resembles course crumbs.
Spray the bottom and sides of crock-pot with Pam or a light rub of crisco or butter. Pour 1/2 apple mixture in bottom, then 1/2 the crumb mixture and repeat. Top with remaining 1/2 cup chopped nuts & 1 tablespoon syrup and cover. Cook on "low" for 3 1/2 - 4 hours. Top with a scoop of vanilla ice cream or whipped cream.
