Ain't Plain Mashed Potatoes
- 8 c mashed potatoes
- 4 strips bacon, diced
- 2 medium onions, thinly sliced
- 1 c Parmesan cheese, freshly grated
- 3 cloves garlic, minced
- 2 Tbsp fresh parsley, chopped
- 1 stick butter
- salt and pepper to taste
Peel and boil potatoes; drain. Fry bacon until crisp; add onion and cook for five minutes, adding garlic near the end. Add bacon mixture and butter to potatoes, mixing thoroughly. Add seasonings as desired.
