Pie Iron Tacos

A pie iron is probably one of the most fun camping cooking tools. These cheesy, tasty pie iron snacks are a fun new way to use the pie iron you know and love. The best part? Kids love pie iron tacos and its’ a great way to introduce them to campfire cooking.



Pie Iron Tacos

Ingredients

  • 1 lb. ground beef or turkey
  • 1 small white onion, chopped
  • 1 pkg. taco seasoning
  • 20 – 25 corn tortillas or fajita-size flour tortillas
  • Shredded cheddar, Monterey jack or Mexican cheese
  • Shredded lettuce
  • Chopped tomatoes
  • Chopped green onions
  • Sliced black olives
  • Chopped cilantro
  • Sliced avocado or guacamole
  • Sour cream or Greek yogurt
  • Salsa

 

Directions

At home:

  1. In a large skillet, sauté ground beef and onion until beef is cooked through. Add taco seasoning and prepare as directed on seasoning pack. Cool and store in zip top bag in fridge.
  2. Shred cheese (or buy pre-shredded). Chop tomatoes, green onions, olives and cilantro and store each one in zip-top bags or travel containers. Transfer all ingredients to cooler when heading to camp.

At camp:

  1. Light a campfire (or coals)and give it 45 minutes for hot coals to develop. Spray pie iron with cooking spray. Add a tortilla and fill with about ½ cup meat and ½ cup cheese. Top with another tortilla, close pie iron and cut away any excess tortilla.
  2. Place in hot coals (not directly in flames) and cook for about 5 minutes, turning occasionally. Open pie iron and check to see if tortilla is golden brown. If so, remove from heat, if not cook for 1-2 minutes longer.
  3. Top with chopped veggies, sliced avocado, sour cream and salsa.
