The Perfect Summer Recipes for RV Cooking

Just because you are in your RV does not mean you cannot go all out on the same delicious meals you make at home. These recipes focus on flavor as well as working with limited cookware, electricity, ingredients, prep time, and cooking surfaces – and based around methods that work perfectly for RV life. 

These can be made in either a tiny RV kitchen in a slow cooker, pressure cooker, an outdoor grill, or portable stovetop. We’ve got you covered for breakfast, lunch, and dinner with these easy summer recipes. They have been road-tested and RV lifestyle-approved!


Frittata in the Pressure Cooker

This super-easy and high-efficiency breakfast dish can be enjoyed any time of day. Who says you can’t have breakfast for dinner? Pair it with a small salad for a sophisticated meal. Chop 6 slices of bacon then sauté in pressure cooker until crispy. Add any extra veggies you would like, sauté until tender. Add in 2 cups of frozen hash browns and stir until slightly thawed, about 2 minutes. 

Grease a heat proof container that fits into your pressure cooker, then whisk together 6 eggs, ¼ cup milk, ½ cup shredded cheese, salt and pepper in a separate bowl. Add bacon and veggie mixture to the eggs, then pour egg mixture into heat proof container. Pour water into the bottom of your pressure cooker, set egg mixture bowl inside pressure cooker, lock the lid and set to high pressure for 20 minutes. When done, loosen edges and slide onto large plate. Optional garnish with green onions and more cheese. 


Cincinnati Chili Dogs in the Slow Cooker

This is the ultimate summer meal, and so easy and flavorful – perfect for RV living.

Ingredients: 1 ½ pounds ground beef, 2 small onions, chopped, 2 – 15 oz cans tomato sauce, 1-1/2 tsp baking cocoa, ½ tsp ground cinnamon, ¼ tsp chili powder, ¼ tsp paprika, ¼ tsp garlic powder, 2 Tbsp Worcestershire sauce, 1 Tbsp. cider vinegar, 10 hot dogs, 10 hot dog buns, shredded cheddar cheese.

In a large skillet, cook ground beef over medium heat until no longer pink. Drain. Then, in a 3-qt. slow cooker, combine the beef, with 1 chopped onion, add the next 8 ingredients. Cook covered on low for 2 hours, then add hot dogs. Continue cooking on low heat another two hours. Serve on buns; top with shredded cheese and remaining chopped onion. 


Portobello Grilled Tacos

Who doesn’t love tacos on the grill? An easy meatless option is to simply grill portobello mushrooms with just a touch of olive oil, salt and pepper, or use your favorite marinade. Once they are grilled, heat tortillas on the grill for a few seconds, then load them up with the mushrooms, and top with your favorite toppings, such as salsa, lime and avocado. Pair with margaritas or other tasty drink of choice and you have a party!


Fall Off the Bone BBQ Ribs

It wouldn’t be summer without classic pork ribs. You don’t need a fancy smoker to make the very best ribs. Make your own delicious seasoning rub by combining 2 Tbsp paprika, 2 Tbsp brown sugar, 2 tsp salt, 2 tsp garlic powder, 2 tsp chili powder, 1 tsp onion powder, 1 tsp ground chipotle pepper, ¾ tsp dried thyme. 

Then take 4 pounds of boneless country-style pork ribs and place in a foil-lined pan, then rub generously with seasonings. Sear on the outdoor grill on high, 2-3 minutes on each side. Then transfer to a 5-qt. slow cooker. Whisk together your favorite BBQ sauce and beer, then pour over ribs. Cook covered on low for 3-4 hours. Serve up hot and fresh with your favorite sides!
