Campground Pot Luck Recipes

Is there anything better than a campground pot luck? You get to hang out with fellow campers and enjoy delicious food!

Bring one of these tasty dishes to the next campground pot luck and you're sure to be popular with your fellow campers. Plus, they're all easy to whip up in an RV or cabin kitchen. 

Broccoli Salad

This easy salad is a hit at any gathering. You can never go wrong with bacon!

Ingredients

2 crowns of broccoli

1/2 cup raisins

1/2 cup sliced almonds

1 small onion, diced

4 slices bacon

1 cup mayonnaise

1/3 cup sugar

2 teaspoons vinegar

Instructions

Cut the broccoli into small florets and place in a large bowl with raisins, almonds and onion. Cook the bacon until crisp and chop. Place bacon in the bowl with the broccoli. In a separate bowl mix the mayo, sugar and vinegar. Mix the dressing into the other ingredients and refrigerate until chilled. 

Deviled Eggs

There may actually be a law on the books dictating that if a pot luck is held in the south deviled eggs must be served. If you want to be the hero of any pot luck bring deviled eggs. 

Ingredients

  •  12 eggs, hard boiled and peeled
  •  1/2 cup mayonnaise
  •  2 tablespoons prepared yellow mustard
  •  1/4 teaspoon salt
  •  1/2 teaspoon ground black pepper
  •  1/4 teaspoon paprika
  •  1/4-1/2 teaspoon dill for garnish

Instructions

Slice eggs in half lengthwise. Remove yolks and place in a mixing bowl. Using a fork, mash the yolks. Add mayonnaise, mustard, salt, pepper and paprika and mix until smooth. Fill each egg white half with equal amounts of yolk mixture. Garnish each egg with a sprinkling of dill. Refrigerate covered until ready to serve.

Watergate Salad

This salad comes together in just a few minutes and is absolutely delicious

Ingredients

1 box of pistachio pudding mix

20 oz. can of crushed pineapple

1 cup mini marshmallows

1/2 cup chopped pecans

8 oz. tub of Cool Whip

Instructions

Mix the pudding and crushed pineapple. Fold in the nuts, marshmallows and Cool Whip. Refrigerate until chilled. 

Chocolate Eclair Cake

This no-bake dessert is easy, feeds a crowd and never disappoints

Ingredients

1 box of graham crackers

2 boxes of instant vanilla pudding

8 oz. tub of Cool Whip

3 cups cold milk

Topping

1 cup sugar

1 stick butter

1/3 cup cocoa

1/4 cup evaporated mikl

1 teaspoon vanilla

Instructions

In a bowl mix milk and pudding until thickened and then mix in the cool whip. In a 9 by 13 baking dish, lay out a single layer of graham crackers. Pour half of the pudding mixture over the graham crackers. Layer more graham crackers over top. Pour on the remaining pudding mixture and add another layer of graham crackers. For the topping mix the sugar, cocoa and milk in a saucepan. Place over heat and bring to a boil for one minute, stirring constantly. Cool the mixture slightly and add the butter and vanilla. Pour over the cake and refrigerate overnight.
