Set aside the apple, sugar and cinnamon. Combine the other dry ingredients. Mix the wet ingredients and add to dry ingredients; stir to make a batter. Toss the apple pieces in a plastic bag with the cinnamon and sugar, add to the batter and stir in. Bake in a greased pan at 350 degrees for 25-30 minutes. (In a cast iron dutch oven this is done by setting the oven on a bed of 7 hot coals, and placing 14 hot coals on the lid. Put a few small pebbles under the cake pan to prevent scorching.) Serve with whipped cream.
