Western Crockpot Breakfast Burrito's


Makes 6

  • 1 1/2  c  shredded Monterey jack cheese
  • 1 1/2  c  shredded cheddar cheese
  • 3/4  c  diced cooked ham
  • 1/2  c  chopped and seeded tomatoes ( 8 oz can diced tomato-drain)
  • 1/2  c  chopped green peppers
  • 3/8  c  chopped onion
  • 6  flour tortillas
  • scrambled eggs - prepare separately


Combine ham, tomatoes and onion in the crockpot. Cover; cook on low for 2 hours. Stir in cheese. Cook for 10-15 minutes on high or until cheese is melted. Add scrambled eggs prepared in skillet, to the mixture during the last 15 minutes. Mixture may be served on a flour tortilla, or wrapped in the tortilla burrito style to wrap tortilla, spoon mixture into center, fold about 1/4 of the bottom of the tortilla toward the center to form a pocket. Begin rolling the side of the tortilla toward the center until it is fully rolled.
