Ship Wreck


  • 10  medium potatoes
  • 1  onion (yellow or red)
  • 1  pound(s)  bacon
  • 6 - 8  large eggs (mixed as if scrambled)
  • 4 - 5  Tbsp  vegetable oil
  • 1  c  shredded cheese


Peel and slice the potatoes and place in hot skillet with oil. Cut bacon into one-inch pieces and combine with potatoes. Chop onions and add to potato/bacon mixture. When the potatoes are soft/crispy and bacon is cooked, add the eggs and cook until eggs are fluffy and done. Top with the shredded cheese.
