This is our favorite potato recipe because it's so easy!
- 2.5 pound(s) New potatoes (red)
- Butter or margarine
- 1 Sweet onion
- Jalapeños, sliced or diced
Slice the potatoes about ¼ inch thick (leave the skins on). Mound them up on a big piece of aluminum foil. Slice up the onion thin and place on top of potatoes. Put a few spoons of margarine or butter on top. Put on Jalapenos - as many or as few as you like. Season to your taste with salt and pepper. Lay 4 or 5 pieces of bacon across the top. Now wrap the whole mess up in the foil. You want to put them on your grill with the bacon side up for about 20 minutes. Then flip for about 10 minutes and they should be done. They go great with a steak and salad!! Left-overs are good with breakfast turned into hash browns.
