Mets Eggs


Makes 4

  • 1  pound(s)  Italian sausage
  • 6-10  potatoes
  • 12  eggs
  • 1  onion
  • 1  green pepper
  • 1  can of diced Italian tomatoes
  • dash  milk
  • 8  oz  fiesta blend cheese
  • oil
  • salt and pepper


Slice potatoes thin (1/4" slices). Dice tomatoes and cut onions into strips. Cook the potatoes, onion, sausage, and green pepper in a dash of oil. Turn occasionally. Meanwhile, in a bowl mix the eggs, cheese, tomatoes, and milk. When the potatoes and sausage are cooked, add the egg mixture. Stir until the eggs are done.
