Meat Cakes and Potatoes

Its very simple, not many ingredients, and only uses 1 pan. Many of my friends have added this recipe to their regular menu planning at home. Enjoy!

Ingredients

  • 1  pound(s)  ground beef
  • 1  egg
  • 2  slices of bread, broken into small pieces
  • 1/4  chopped onion, optional
  • 1/4  c  flour, optional
  • 4 -5  medium potatoes sliced, peeling optional
  • water
  • salt and pepper

Preparation

Mix ground beef, egg, bread, onion, salt & pepper together and form into 4-5 hamburger shaped meat cakes. Lightly brown meat cakes in a frying pan on both sides. Do not cook all the way through - just brown. Drain off grease and leave meat cakes in frying pan. Spread sliced potatoes over top of cakes in layers to completely cover meat cakes and use up all potatoes. Add enough water to the frying pan to cover the top of the meat cakes. Sprinkle salt and pepper on top of potatoes and cover with lid. Simmer for about 20 minutes or until potatoes are soft. My family likes to dip the meat cakes and potatoes in ketchup on their plates.
