Italian Chicken


  • frozen skinless boneless chicken tenderloins
  • 1  bottle of light Italian salad dressing


Place frozen chicken in a large ziplock baggie. Pour enough dressing over the chicken to cover it. Place in the refrigerator the night before leaving for your camping trip. As chicken thaws, poke with a sharp knife or fork so dressing soaks into chicken. At the campsite, prepare fire and let heat up until there are no flames and coals are turning white; this takes about 45 minutes. Place chicken on cookie sheet, poke with knife or fork again and add more dressing if needed. Place cookie sheet on tripod rack about 8-12 inches above coals. Cook, turning several times, until inside of chicken is white and juices run clear; about 30-45 minutes.
