Fruit Compote in Foil
A great dessert recipe for your next camping trip from the experts at KOA.
- sliced pineapple
- fresh blueberries
- fresh strawberries
- powdered sugar
- whipped cream or sour cream
Place a slice of pineapple on a square of aluminum foil. Pile up some blueberries and strawberries on the top. Sprinkle with a little of the powdered sugar. Seal the fruit tightly in the foil. Heat about 10 to 15 minutes on the grill. To serve, fold foil back and top with the cream.
For curried fruit: Follow above recipe, except omit the powdered sugar and add 2 tablespoons butter and 1 teaspoon curry powder. Serve this with lamb or chicken.
For fruit with mint: Follow the above recipe. Heat chopped mint (10 leaves or so) in a 1 tablespoon of water. Bruise the mint (crush it with the back of a spoon against the side of the pan). Strain the leaves off and pour the flavored water over the fruit. Continue to warm through.
