Fresh Fruit Cake

Ingredients

  • 1  c  apples (chopped)
  • 1  c  pears (chopped)
  • 1  c  peaches (chopped)
  • 2  c  sugar
  • 1  c  pecans (chopped)
  • 3  c  self-rising flour
  • 1  tsp  cinnamon
  • 1  tsp  nutmeg
  • 1  c  vegetable oil
  • 1  tsp  vanilla
  • 2  eggs
  • 1/2  c  brown sugar
  • 1  stick butter

Preparation

Line a 10" or a 12" Dutch oven with quick-release foil for this recipe. It is very dense and lining with foil will make it easier to remove the cake from the oven. Peel the peaches, and chop in small pieces. Chop apples and pears, but do not peel. Combine sugar, flour, 1/2 cup of chopped pecans, cinnamon, nutmeg, oil, vanilla and eggs in large bowl. Mix all ingredients, then add the fruit and mix well. Pour batter into the lined Dutch oven. For topping, combine butter, remaining 1/2 cup pecans and brown sugar. Mix until blended, but crumbly, and spoon over top of cake batter. Bake for 20 minutes over a low fire on middle hook. Move to 2nd shortest hook, add top coals for 15 minutes; then remove from fire and continue baking for another 20 to 25 minutes. Toothpick will not come out clean, as this is a very dense, moist cake. Total baking time is about 1 hour 15 minutes. Kitchen directions: Bake 1 hr. 15 min. at 350°.
