Curry Chicken Salad


Makes 4

  • 2  large cans of cooked white chicken breast (9.5 oz.)
  • 1  large red delicious apple
  • 1/2  c  chopped pecans
  • 1  Tbsp  curry powder
  • 1  c  mayonnaise


Open and drain the 2 cans of chicken (fresh cooked chicken can also be used). Place the chicken in a bowl and flake with a fork. Cut the apple into bite size pieces in the same bowl as the chicken. Add the pecans and curry powder. Mix all this together with the mayonnaise. The amount of mayonnaise may vary depending on whether you like lots of mayonnaise in salad or not.

This may be served with fresh grapes, cantaloupe and crackers. A cantaloupe may be cleaned and quartered with the chicken salad served inside.
