Crispy Pan Fried Fish


Makes 56

  • 1  egg
  • 2  Tbsp  French's Prepared Mustard
  • 2  Tbsp  water
  • 1/3  c  corn meal
  • 3  Tbsp  flour
  • 3  Tbsp  grated Parmesan cheese
  • 1 - 2  pound(s)  fish fillets
  • butter, oil or shortening
  • salt and pepper, if desired


Lightly beat together egg, mustard, and water in shallow bowl or pie pan. Combine corn meal, flour and cheese. Dip fish fillets in egg mixture, then in corn meal mixture. Fry in butter or shortening for 3 -4 minutes on each side until fish flakes easily when pierced with a fork. Season with salt and pepper.
